Roast potato seasoning: I used homemade roast potato seasoning, but you can use any other seasoning you prefer.
Smoked paprika: substitute with sweet or hot paprika.
Salt and black pepper to taste
How to make air fryer potato and broccoli
Preheat the air fryer to 365F / 180C
Wash and peel the potatoes, then cut them into bite sizes. Pat dry with a kitchen paper towel and transfer to a bowl.
Drizzle olive oil on the potatoes, then season with smoked paprika, 2 teaspoons roast potato seasoning (or any other seasoning of your choice), salt, and black pepper and toss to combine.
Transfer the potatoes to the air fryer in a single layer and air fry for 10 minutes.
In the meantime, add potato florets and roughly chopped onions to a bowl and cover with hot boiling water. Leave for 3-5 minutes, drain, and transfer to the bowl used for the potatoes earlier.
Season the broccoli and onion with one teaspoon of roast potato seasoning, 1 teaspoon of olive oil, salt, and pepper and mix to combine, then set aside.
Remove the air fryer basket and flip the potatoes. Continue to cook for another 5 minutes.
Add the seasoned broccoli and onion to the potatoes, and air fry for 5-6 minutes or until the potatoes are fully cooked and the broccoli a little charred, shaking the air fryer basket halfway through.
Serve and enjoy as a side dish with other mains of your choice such as Old Bay chicken, broiled salmon, air fryer pork steak and many more.
PS: soaking the onions along with the potato is optional. Only do it if you like soft onions or you don't like the fresh onion taste in your food.

How to store
You can store leftover air fryer potatoes and broccoli in an airtight container for up to 3 days. Make sure it is completely cooled before storing.
