    Tomato cucumber mozzarella salad

    This tomato cucumber mozzarella salad recipe is fresh, light, healthy, and perfect for summer! This salad is made with fresh tomatoes, cucumbers, fresh mozzarella cheese, and a simple vinaigrette dressing.

    It is so easy to put together and ready in under 15 minutes. You can serve it with just about everything, make it complete by serving with any protein of choice, it is simply amazing!

    If you love Caprese salad then you will love this recipe, think of today's recipe as Caprese salad with cucumber but with no balsamic vinegar. This salad is so satisfying and perfect for a light lunch or dinner. To make this delicious light, and fresh summer salad, you will need a handful of fresh ingredients. I didn't use mozzarella pearls for this salad as it is not readily available where I live so the whole one to the rescue.

    If that is the case for you too, simply drain the whole mozzarella ball on a thick kitchen paper towel to drain excess liquid before you cut it into small cubes. Let's get on with it real quick.

    This tomato cucumber mozzarella recipe

    Is easy and quick to make: This salad comes together in no time, 10 minutes, and you are done, it is perfect for those busy weekdays or when you want a healthy meal but don't have much time to cook.

    It is packed with flavor: The tomatoes, mozzarella, and cucumbers are so fresh and flavorful. And the dressing is so simple yet so good, it is bursting with flavors!

    Healthy and light: This salad is made with fresh vegetables and it is a great way to get your daily dose of vitamins. It is also light and low in calories, perfect for those summer days!

    This salad is perfect for summer but can really be enjoyed all year round. It goes great with grilled chicken, fish, or steak. You can also enjoy it as a side dish or main course.

    Make-ahead friendly and a great one to take with you on your potluck, picnic, bbq, or road trip!

    Easily customizable you can easily double or triple this recipe to feed a large crowd. You can also add in other vegetables like bell peppers or olives. The dressing can also be adjusted to your liking, if you fancy, you can add a little bit of honey for additional sweetness.

    Ingredients

    Cucumber: I used English cucumber

    Tomatoes: I used cherry tomatoes but you can use mini plum tomatoes or any other salad tomatoes of choice

    Fresh mozzarella cheese

    Onions: I used red onions but you can substitute with yellow onion.

    White wine vinegar: substitute with red wine vinegar, balsamic vinegar or balsamic glaze

    Olive oil: substitute with extra virgin olive oil

    Fresh lemon juice

    Italian seasoning: substitute with Herbs de Provence or oregano and basil.

    Salt and freshly cracked black pepper

    How to make tomato cucumber mozzarella salad

    To a small mixing bowl, add olive oil, wine vinegar, lemon juice, olive oil, and Italian seasoning and whisk together until emulsified.

    Add the chopped tomatoes, chopped cucumber, onions, and mozzarella cheese to a large bowl. Pour the vinegarette dressing over the salad, and season with salt and black pepper.

    Toss to combine, and keep refrigerated for at least 30 minutes for the flavors

    to meld. Serve and enjoy!

    This salad is best enjoyed fresh but will last in the fridge for up to 2 days. The salad will be a little weepy after 2 days, but that's fine, simply drain the excess liquid before serving. I do not recommend freezing this salad.

    • 4 cups English cucumber washed and chopped
    • 2 cups cherry tomatoes washed and sliced in halves
    • 250 g mozzarella cheese chopped
    • ½ cup red onions sliced and separated
    • 1 Tablespoons white wine vinegar
