This tomato cucumber mozzarella salad recipe is fresh, light, healthy, and perfect for summer! This salad is made with fresh tomatoes, cucumbers, mozzarella cheese, and a simple vinaigrette dressing. To a small mixing bowl, add olive oil, wine vinegar, lemon juice, olive oil, and Italian seasoning and whisk together until emulsified.
Add the chopped tomatoes, chopped cucumber, onions, and mozzarella cheese to a large bowl. Pour the vinegarette dressing over the salad, season with salt and black pepper. Taste and adjust the seasoning accordingly.

How to storeThis salad is best enjoyed fresh but will last in the fridge for up to 2 days. The salad will be a little weepy after 2 days, but that's fine, simply drain the excess liquid before serving. I do not recommend freezing this salad.
