    Easy Sausage Curry

    Nothing says comfort dinner than this easy sausage curry. With this easy and simple recipe, you will learn how to make curried sausage with coconut milk and it's absolutely delicious! This recipe is kids friendly and will also be enjoyed by grown-ups alike.

    You will love this easy curried sausage dinner recipe, did you know you can eat sausage and curry together? Yes, you can and it is an absolute delight. A dinner staple you should have in your recipe box.

    This recipe is simple, easy, and super comforting just like my sausage and bean casserole, with only a few ingredients and less than 40 minutes to make, it is perfect for those busy weeknights.

    Curried sausage is a great recipe for those who love coconut milk and cream in their curry. It is creamy, rich, and flavor-packed. You really should use quality fresh sausages for this recipe as it is almost the highlight of the dish. Biting into that succulent perfectly cooked sausage in that creamy and rich curry gravy is heavenly.

    The best part about this curry is that it can be easily customized to your liking. So, if you prefer a spicier curry, simply add more chili peppers and use hot curry powder. Or, if you want a creamier curry, add more coconut milk or heavy cream. No matter how you make it, this pork sausage curry is sure to be a hit!

    I like to serve this over mashed potatoes, homemade oven chips, couscous, or steamed basmati rice. If you are not a fan of coconut curry, use my Chinese curry sauce recipe instead. Follow all the steps in the recipe add cooked sausages and simmer until the curry thickens.

    Ingredients

    Pork sausages: use any fresh pork sausages of choice, I prefer to use plain ones so that way I get to enjoy the maximum flavor from the sausage and the curry.

    Curry powder: You can use any type of curry powder you want mild or hot. I prefer the hot one and the brand I mostly use is 'Ducross' which is readily available in most Asian or African stores.

    Turmeric powder: This is optional but highly recommended for that rich vibrant curry color.

    Cumin seeds

    Chili flake: substitute with cayenne pepper, the heat compliments the creaminess of the coconut milk.

    Salt and black pepper

    Onion

    Coconut milk

    Olive oil: substitute with any other flavorless oil of choice.

    Cilantro leaves, to serve and garnish

    Instructions

    Preheat the oven to 200C/400F

    Remove the sausages from its packaging and arrange them in a foil-lined rimmed baking sheet in a single layer. Place the baking sheet in the oven and bake the sausages for 20-25 minutes flipping it halfway through.

    Remove the sausages from the oven and set them aside (You can slice each sausage into 2 or 3 smaller pieces if you prefer)

    Place a skillet over medium high heat, add sliced onions and saute until soft and fragrant.

    Add cumin seed, curry powder, and turmeric powder and stir to combine for about 15 seconds just to release the fragrance.

    Stir the coconut milk into the sauteed aromatics, add half a cup of water (sub with chicken stock) and stir to combine.

    Season with salt, black pepper, and red pepper flakes and stir.

    Add the cooked sausages to the coconut curry, reduce the heat and leave to simmer for 5-8 minutes or until the curry thickens slightly. Just before you take the curry off the heat, stir in one cup of frozen peas and simmer for another minute. Remove the pan from the heat and serve as desired.

    PS: cook the sausages in the air fryer to cut down about 20 minutes from the cooking time.

    How to store and reheat

    Leftover curried sausage can be stored in an airtight container and refrigerated for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or broth over medium-low heat until piping hot throughout.

    You can also freeze the leftover for up to 3 months in a freezer safe bag or an airtight container. Let it thaw in the fridge overnight before reheating.

    Can I use chicken sausage

    Yes, you can use chicken sausages or any other type of sausages for this recipe. It could be thin or thick ones, just make sure to cook it thoroughly before consuming it.

    Is this recipe gluten-free

    yes, it is but be sure to check the list of the ingredients you will be using to be double sure

    Does coconut milk thicken curry

    Yes, it does. The longer you cook it the thicker it will get. However, if you want it to be thick from the start, add 1 tablespoon of cornstarch slurry to the curry and stir to combine. Let it cook for 5 minutes or until it reaches the desired consistency.

    Can I use frozen sausages

    Yes, you can but make sure to thaw them before you cook with them.
