Easy Sausage Curry

Nothing says comfort dinner than this easy sausage curry. With this easy and simple recipe, you will learn how to make curried sausage with coconut milk and it's absolutely delicious! This recipe is kids friendly and will also be enjoyed by grown-ups alike.

Ingredients
  

  • 10 pork sausages
  • 400 g coconut milk full fat
  • 1 Tablespoon olive oil
  • 1 medium onion sliced
  • 1 Tablespoon curry powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon cumin seed
  • ½ cup water
  • Chili flake to taste
  • Salt and black pepper to taste
  • Cilantro leaves to serve and garnish

Instructions
 

  • Preheat the oven to 200C/400F
  • Remove the sausages from its packaging and arrange them in a foil-lined rimmed baking sheet in a single layer. Place the baking sheet in the oven and bake the sausages for 20-25 minutes flipping it halfway through.
  • Remove the sausages from the oven and set them aside (You can slice each sausage into 2 or 3 smaller pieces if you prefer)
  • Place a skillet over medium high heat, add sliced onions and saute until soft and fragrant.
  • Add cumin seed, curry powder, and turmeric powder and stir to combine for about 15 seconds just to release the fragrance.
  • Stir the coconut milk into the sauteed aromatics, add half a cup of water (sub with chicken stock) and stir to combine.
  • Season with salt, black pepper, and red pepper flakes and stir.
  • Add the cooked sausages to the coconut curry, reduce the heat and leave to simmer for 5-8 minutes or until the curry thickens slightly. Just before you take the curry off the heat, stir in one cup of frozen peas and simmer for another minute. Remove the pan from the heat and serve as desired.

Notes

How to store and reheat
Leftover curried sausage can be stored in an airtight container and refrigerated for up to 3 days. You can also freeze the leftover for up to 3 months. Let it thaw in the fridge overnight before reheating.
Reheat in the microwave or on the stovetop with a splash of water or broth over medium-low heat until piping hot throughout.
PS: cook the sausages in the air fryer to cut down about 20 minutes from the cooking time.
