It is no news that I love quick chicken recipes and today, I am sharing with you another simple and quick yet juicy and delicious chicken recipe you will love. This is just as good as my stove top bone-in chicken thighs and cilantro lime chicken recipe. I love the versatility in these recipes, while these recipes are made over the stove, they are good grilled, baked, or air fried.
Let’s talk a bit about the seasoning I used in making this finger-licking chicken thigh great. I used my homemade Cajun spice rub (full recipe in the recipe card). I love how I am able to customize the spice rub to taste and I believe you will love it too. It is so good that it makes whatever you use it for, come alive.

Homemade Cajun seasoning: you can use store-bought cajun seasoning but I would recommend one with low sodium since you would still be adding salt to the chicken.
Boneless skinless chicken thighs
Unsalted butter
Vegetable oil
Salt
Fresh parsley
How to make Cajun chicken thighs in easy steps
Prep the chicken thighs by taking out any unwanted visible fat and pat the chicken dry with a kitchen towel. This way, the seasoning sticks on the chicken, more importantly, dry chicken means less splatter once it hits the hot oil.
Season the chicken with salt, then add the cajun seasoning. Mix together so that the chicken is well coated.
Place a skillet on medium-high heat, then heat up vegetable oil and butter until hot and butter melted.
Carefully add the chicken to the pan and sear for about 5 -7 minutes on each side until the chicken thigh is golden brown and charred on the edges. The internal temperature of cooked chicken should read 165F/73C
Add chopped parsley to the chicken and mix it around the pan for another minute. Take the chicken off the heat and rest for about 5 minutes before serving.
