Ingredients
  

  • 1 tablespoon homemade Cajun seasoning substitute with low salt store-bought Cajun seasoning
  • 6 Boneless skinless chicken thighs
  • 2 tablespoon unsalted butter
  • 1 tablespoon vegetable oil
  • Salt to taste
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Prep the chicken thighs by taking out any unwanted visible fat and pat the chicken dry with a kitchen towel. This way, the seasoning sticks on the chicken, more importantly, dry chicken means less splatter once it hits the hot oil.
  • Season the chicken with salt, then add the cajun seasoning. Mix together so that the chicken is well coated.

  • Place a skillet on medium-high heat, then heat up vegetable oil and butter until hot and butter melted.
  • Carefully add the chicken to the pan and sear for about 5 -7 minutes on each side until the chicken thigh is golden brown and charred on the edges. The internal temperature of cooked chicken should read 165F/73C

  • Add chopped parsley to the chicken and mix it around the pan for another minute. Take the chicken off the heat and rest for about 5 minutes before serving.
