Spinach Rice Recipe (Spanakorizo)
My version of spinach rice is a little bit different from the classic recipe because I didn’t cook the rice from raw, I used leftover cooked rice. I love the original version and make it once in a while, but today’s recipe is the way I use up leftover white rice and baby spinach lying in my fridge waiting to be used. I also find my easy version healthier than the other way, the spinach stays green, retain most of its nutrients and requires less cooking.
By the way, the traditional spinach rice is also known as spanakorizo which means a dish of spinach and rice. I love the versatility of this recipe and for some reason, when I make this rice dish, I mostly pair it Piri Piri chicken (recipe coming soon). What can I say, the family loves it, just like they love me making this pressure cooker rice and chicken. This was our Easter Sunday rice.
This is the only rice side dish to serve with anything
Spinach rice is so versatile especially when cooked this way that you can serve it with chicken, fish, meat or on its own. You can also bulk this recipe as a main dish by adding some shredded chicken, roasted vegetables or flaked salmon.
I make this rice part of our Meatless Monday meal as we are big rice eaters in my home especially me, I could eat rice 5 times a week. Yeah, I know what you are thinking. I can’t help it. Right, this is supposed to be a quick post, let me show you quickly how I make my easy spinach rice (Spanakorizo) with this step by step guide and instruction on how to make it with raw rice.

I'm always looking to add spinach into meals and this is by far my favorite spinach rice. I cooked my brown rice in an instapot (first time ever) and it came out amazing. I also used frozen spinach. I'm not sure I want to share with my kids who are begging for it!

I am 3 weeks out from major surgery. Hubby is doing a lot of grilling but I wanted to make a quick rice side. Google pulled this spinach rice up first. I am so glad. We truly enjoyed this tasty yet, quickly prepared dish. Thank you for sharing. Oh. I cannot eat lemon. The rice was delicious without it..

This was very goo. . I picked some old spinach and that means it is tougher than I would normally use in a salad,. I looked for creative ways to use it in a cooked dish. This was delicious. I used already cooked rice, so it was fast to make. Thanks.

Thank you so much, Mary, I am glad you enjoyed the recipe

What are garlic granules? If using fresh garlic and sautéed with onions, how much would you recommend?
Ajoke says
garlic granules are the coarser versions of garlic powder. You can use as much garlic as you can tolerate, I'd suggest 2 garlic cloves and 1/2 cup chopped onions.

Thanks for sharing the recipe. I was actually searching for a white rice with garlic and spinach recipe I used to make when I stumbled upon this one. I only had white rice and planned to make double the amount but didn’t double anything other than the rice. It’s a good recipe so next time I will double everything and remember to grab some basmati at the grocery store.
