Why you will love this recipe
- The best turkey recipe is perfect for a small-sized family or when you don't want to roast a whole turkey.
- Quick cooking time: The turkey breast is butterflied before air frying, resulting in faster cooking time while avoiding the risk of overcooking, which can lead to dry meat. This technique ensures a moist and tender outcome.
- Minimal prep using simple everyday pantry staple ingredients
- Make ahead: You can marinate the turkey for up to 48 hours in the fridge at the right temperature.
- Customizable: I love using Herby seasoning for poultry, but you can season this turkey however you like. Here are some of my homemade seasonings and marinade collections you can check for inspiration.
- If you have any leftovers, you can use them for other quality meals apart from sandwiches. You will love my leftover turkey curry and turkey fried rice.
- No need for butter: with just olive oil and other chosen herbs and spices of your choice, you can be guaranteed a juicy, tender, and flavorful meat.

How to make air fryer boneless turkey
Remove the boneless turkey from its mesh casing and lay it flat on a plate or workstation. Laying it flat will help it cook faster without it drying out.
Pat it dry on both sides with a kitchen paper towel.
In a small bowl, add parsley, rosemary, thyme, oregano, onion powder, garlic powder, salt and black pepper. Mix until well combined.
Drizzle olive oil on the boneless turkey and rub it all over. Divide the seasoning mix into two and rub it on both sides of the turkey breast.
Preheat your air fryer to 365F / 180C for 5 minutes.
Place the seasoned boneless turkey skin side up in the air fryer basket and cook for 40-50 minutes, flipping halfway through. The internal temperature should reach at least 165F /74C to be considered safe to eat.
Remove from the air fryer and transfer to a plate. Cover it closely with foil and allow it to rest for 10-20 minutes before you serve or slice it. Enjoy!

How to store
Cooked turkey can be stored in an airtight container in the fridge for up to 4 days. Make sure it is properly cooled before storing it away.
You can freeze it for up to 3 months in an airtight container or a Ziploc bag.
Make these delicious recipes with your leftover turkey: leftover turkey fried rice (this is my favorite) or leftover turkey curry with coconut milk.
Tips
- When you flip the turkey, tilt the air fryer basket to one side and use the oil in the air fryer basket to baste the turkey to keep it moist.
- If you want to cook your turkey faster eg, you need it another dish, then you can slice it up, season, and cook half the time specified in the recipe.
- Allow the meat to come to room temperature before cooking for even and faster cooking.
- Swap olive oil for avocado oil or melted unsalted butter.
- I used a large turkey breast (3.7lb). Adjust the timing accordingly if using a small-sized one, as it would cook faster.
- Start checking the internal temperature from 30 minutes so that you don't overcook the turkey.
- Experiment with different herbs and spices to create your own unique seasoning blend.
- Resting the turkey after cooking is important to allow the juices to redistribute, resulting in juicier and more flavorful meat.
