How to make leftover turkey fried rice
Prep the ingredients: It is important the ingredients you will use are within your arm's reach as this recipe cooks quickly. Chop the green onions, separating the white and the green parts, then roughly chop the garlic.
Make the fried rice sauce: in a small bowl, whisk together soy sauce, oyster sauce, and rice vinegar then set aside.
Whisk the eggs: break the eggs in a bowl, add a pinch of salt and whisk to combine.
Place a wok or shallow skillet on medium-high heat, and add oil and heat until it shimmers but is not burning. Add the whisked eggs, leave it to set for 10 seconds, then stir it to scramble it without breaking it up too much. Remove from the pan and set aside.
Add the remaining oil to the skillet, add the white part of the green onions and chopped garlic, and cook for 30 seconds to 1 minute until fragrant.
Add the frozen mixed vegetables, stirring occasionally for 2-3 minutes or until soft and fully defrosted.
Next, add the chopped leftover turkey, followed by the Chinese 5 spice, white pepper, and a pinch of salt, and stir fry for 30 seconds.
Add the cooked rice and break it up with a spatula. Next, add the stir fry sauce scrambled eggs and stir to combine.
Just before you take the fried rice off the heat, add the green part of the green onion and give the rice a good stir. Take it off the heat and serve immediately. Enjoy

Tips
- Feel free to add other vegetables such as bell peppers, zucchini, or mushrooms, to make it more nutritious and colorful.
- You can also substitute the turkey with chicken, beef, pork or shrimp if desired.
- Serve this leftover turkey fried rice as a main dish or as a side dish with your favorite protein. The possibilities are endless!
- Fried rice is best made using day-old cooked rice, which has had time to dry out a bit. Freshly cooked rice can become mushy when stir-fried. That said, use whatever type of rice you have available, it will still turn out delicious.
- Use any leftover roasted vegetables from your holiday meal instead of frozen mixed vegetables for even more flavor.
