What you will need
2 hearts romaine lettuce washed and sliced thinly
200g feta cheese block in brine, crumbled
2 springs of scallions (green onion), thinly sliced
lettuce salad dressing
Dillweed: this should be fresh dill. However, I am using ½ teaspoon of dried dill as that is what I had at the time of making this recipe
1 teaspoon oregano
2 Tablespoons olive oil
Lemon juice from one lemon: Substitute with red or white wine vinegar.
Salt to taste
How to make Greek lettuce salad
In a small measuring jug, whisk olive oil, lemon juice, oregano, dill, and salt to taste until combined, then set aside.
In a large bowl, add the thinly sliced lettuce and green onions. Pour the dressing over the salad and crumble the feta cheese on top. Using your hand, mix everything to combine and serve immediately or place in the fridge for about 30 minutes for the flavor to meld together. Enjoy!
