I love broccoli big time. It’s one of my favorite and go-to vegetables. If I don't cook it on the stove, I cook it in my air fryer 95% of the time. It is quick and easy, and the crunch is next to none. Cooking it in the air fryer keeps its vibrant green color and avoids the mushiness that comes from boiling or steaming.
Cooking carrots, onions, and broccoli in the air fryer creates a flavorful and textured mix you will love. The carrots bring a natural sweetness, onions add a tangy sweetness, and together with broccoli, they form a colorful, appetizing side dish that complements any main course.
PS: I usually soak my broccoli in hot water for 3-5 minutes before cooking. This is the best method for cleaning it, as cold water cannot reach the tiny crevices like hot water can. It also kick-starts the cooking process before using the air fryer.

How to make air fryer broccoli and carrots
Prep the veggies: Start by cutting the head of broccoli into florets (similar chunkiness) and slicing the carrots at an angle about the thickness of a pound coin. This will ensure that the veggies cook evenly.
In a large bowl, add broccoli florets, pour hot boiling over it, and soak for 3-5 minutes. Drain in a colander and run under cold water briefly to stop cooking. Set aside to drain completely or pat dry with a kitchen paper towel.
In the meantime, Preheat your air fryer at 385F / 185C for about 3-5 minutes.
Using the same large dry bowl. Add the carrots, chopped onions, onion granules, salt, black pepper, and olive oil and mix well to combine.
Transfer the vegetables to the air fryer basket and spread them out evenly.
Air fryer for 7-10 minutes or until the carrots are fork tender and the broccoli charred a little around the edges, stirring the vegetables halfway through the cooking time.

I don't have an air fryer
Don't have an air fryer? No problem! You can still make this delicious side dish by roasting the vegetables in the oven at 400F / 200C for 18-20 minutes. Make sure to toss them halfway through cooking time. Enjoy!
How to store
Leftover air-fried broccoli and carrots can be stored in the fridge in an airtight container for up to 3 days.
Reheat in the microwave, oven, or air fryer until heated through. You can also add them to a salad or use them as filling for wraps and sandwiches if you don't want to warm it.
