The outcome is amazing especially if you season the veggies correctly. You will get perfectly air fried vegetables at all times.
I have never been this excited to share an air fryer recipe before now, honestly, this recipe will win hearts. Your pickiest eater wouldn’t be able to say no to these vegetable medley. This recipe is easy and quick and packed full of flavour.
Don’t even get me started on the simple marinade used to marinate the vegetables. From when you start mixing until you get it out of the air fryer, your kitchen would be filled with delicious aroma nobody can resist.

What kind of vegetables can you cook in an air fryer?
You can cook almost any vegetable of choice in the air fryer. If cooking more than one type of vegetable, it is best to chop them into equal sizes, so they’ll cook evenly. If cooking hard vegetables like butternut squash or potatoes with soft types, then you should start cooking the hard one first and add the soft vegetables towards the end of the cooking time.
Back to the questions, here is the list of vegetables you can cook in your air fryer. Here are the usual suspects
Broccoli, cauliflower, zucchini, squash, Brussels sprouts, radishes
Bell peppers, jalapenos, avocado, tomatoes, mushrooms, pickles
Asparagus, green beans, mangetouts, corn on a cob, kale, aubergine
Potatoes, butternut squash, carrots, sweet potatoes
How long can I marinate vegetables?
You can marinate for 30 minutes to a few hours before cooking. No more bland veggies!
What you will need
Zucchini also known as courgette
Bell peppers: I used a combination of red and yellow bell pepper
Broccoli: I used a small head of broccoli
Red onions
Marinade
Smoked paprika
Garlic granules
Herb de Provence: store bought or homemade, check out my homemade herb de provence recipe
Salt and pepper
Olive oil
Lemon juice
How to make the best air fryer marinated roasted vegetables
Wash the vegetables, deseed the bell peppers and chop the rest of the veggies into equal sizes.
Transfer to a large mixing bowl, then sprinkle the smoked paprika over, garlic granules, Herb de Provence, salt and pepper, olive oil and lemon juice and mix or toss to combine.
Preheat the air fryer at 200c/400f for 3 minutes.
Transfer the marinated vegetables to the air fryer basket and spread them out. Cook for 10 to 15 minutes shaking the air fryer basket every 4 to 5 minutes or halfway through.
Serve and enjoy!
How to store
This roasted vegetable medley makes great meal prep and stores beautifully well in the fridge in an airtight container for up to 7 days. Yes, you read that well, it will keep for a whole week in the right fridge temperature.
To reheat: place in heatproof bowl or line the air fryer basket with perforated parchment paper and cook for 3 minutes at 180C/365F.
To repurpose: You can eat leftover roasted vegetable warm or cold. I love it as a breakfast of crusty bread like antipasti or in a wrap with chicken.
Tips
Do not cut the vegetables too small as it would burn easily that way.
Too much oil will make the vegetables soggy, remember you are cooking it in the air fryer for its health benefit

Air Fryer Vegetables (Perfectly Roasted Air Fryer Veggies)
Ingredients
- 1 Zucchini also known as courgette
- 2 Bell peppers I used a combination of red and yellow bell pepper
- 1 small head broccoli
- 1 medium red onion
Marinade
- 1 teaspoon Smoked paprika
- 1 teaspoon garlic granules
- 1 teaspoon Herb de provence
- Salt and pepper
- 1½ tablespoon olive oil
- 2 tablespoon Lemon juice
Instructions
- Wash the vegetables, deseed the bell peppers and chop the rest of the veggies into equal sizes.
- Transfer to a large mixing bowl, then sprinkle the smoked paprika over, garlic granules, Herb de Provence, salt and pepper, olive oil and lemon juice and mix to combine. Leave to marinate for 15 to 30 minutes (This step is optional)
- Preheat the air fryer at 200C/400F for 3 minutes.
- Transfer the marinated vegetables to the air fryer basket and spread them out. Cook for 10 to 15 minutes shaking the air fryer basket every 4 to 5 minutes until tender, crunchy and perfectly roasted.
- Serve and enjoy!
