    I am now a big fan of sheet pan (tray bake) meals and am steadily expanding my collection of favorite recipes! Not only do I find them easy to make, I especially love the oven or the air fryer do most of the job allowing you to put for feet up or do other house chores while you wait.

    If you are like me and you always looking for a way to put a delicious and satisfying dinner on the table on a busy weeknight without compromising on taste and flavor then you will love this sheet pan sausage peppers and potatoes.

    One of the best things about this recipe is how easy it is to customize to your preferences. You can use any type of sausage you like, such as spicy or sweet Italian sausage, chicken sausage, or even vegan sausage. You can effortlessly substitute the potatoes for another type of root vegetable, such as sweet potatoes or carrots.

    This recipe is economical, like many of the recipes on this website, you won't be breaking the bank to make this one pan meal. More importantly, cleanup is a breeze with this amazing recipe.

    What you will need

    To make this sheet pan sausage and potatoes you will need these few ingredients

    Sausages: I used fresh Cumberland sausages, you can use any sausage of choice, smoked sausages would work for this recipe as well.

    Baby potatoes

    Bell pepper: I used a combination of green and red bell peppers, you can use any colour of bell peppers you prefer.

    Onion

    Extra virgin olive oil

    Cajun seasoning

    Salt and pepper

    How to make sheet pan sausage and potatoes

    This recipe is an easy and straightforward one-pan meal. Preheat your oven to 400F/200C.

    First, make sure all the veggies are washed and pat dry with a kitchen paper towel. Then go ahead and prep the vegetables by dicing the onion and bell pepper into large chunks and slice the potatoes in halves. Unlink the sausages if they are linked, you can use a sharp knife for this task or a pair of scissors.

    Transfer the chopped onions, bell peppers and potatoes on a rimmed baking sheet pan. Drizzle the extra virgin olive oil onto the veg and season with cajun seasoning, salt, and black pepper. Carefully mix to combine making sure each of the vegetables is coated with the oil and seasoning.

    After that, place the sausages on the baking sheet pan in between the vegetables. Spray the top of the sausages with cooking oil (optional).

    Place the baking tray in preheated oven and bake for 25-30 minutes until sausages are cooked through and potatoes are golden brown and fluffy in the middle. For safe consumption, the internal temperature of the sausages should read between 155 - 165F/ 70 - 74C.

    Sprinkle freshly chopped parsley on your delicious sheet pan sausage and potatoes and enjoy!

    How to store and reheat

    You will be happy to know that this sheet pan sausage and potatoes is great for meal prep as it keeps well in the fridge for a few days. Make sure it is cooled completely then transfer it to an airtight container in the refrigerator for 3-4 days.

    You can reheat it in the microwave or an air fryer if you have one.

    Tips

    • If you are using thin sausages such as chipolatas, then you are best to cook the vegetables first for 15 minutes before adding the sausages so that everything is cooked through at the same time.
    • If you like a crispy finish, turn on the broiler setting for the last 5 minutes of cooking.
    • To make this sheet pan dinner vegan-friendly, you can use plant-based sausages and cook the sausages according to the package instructions.
    • Not a fan of Cajun seasoning or if it's not readily available to you, feel free to use any other seasoning of choice. Try my roasted root vegetables seasoning or All purpose seasoning blend.
