Sausages: I used fresh Cumberland sausages, you can use any sausage of choice, smoked sausages would work for this recipe as well.

Bell pepper: I used a combination of green and red bell peppers, you can use any colour of bell peppers you prefer.

Extra virgin olive oil
Cajun seasoning
Salt and pepper
How to make sheet pan sausage and potatoes
This recipe is an easy and straightforward one-pan meal. Preheat your oven to 400F/200C.
First, make sure all the veggies are washed and pat dry with a kitchen paper towel. Then go ahead and prep the vegetables by dicing the onion and bell pepper into large chunks and slice the potatoes in halves. Unlink the sausages if they are linked, you can use a sharp knife for this task or a pair of scissors.
Transfer the chopped onions, bell peppers and potatoes on a rimmed baking sheet pan. Drizzle the extra virgin olive oil onto the veg and season with cajun seasoning, salt, and black pepper. Carefully mix to combine making sure each of the vegetables is coated with the oil and seasoning.
After that, place the sausages on the baking sheet pan in between the vegetables. Spray the top of the sausages with cooking oil (optional).
Place the baking tray in preheated oven and bake for 25-30 minutes until sausages are cooked through and potatoes are golden brown and fluffy in the middle. For safe consumption, the internal temperature of the sausages should read between 155 - 165F/ 70 - 74C.
Sprinkle freshly chopped parsley on your delicious sheet pan sausage and potatoes and enjoy!
