How to make goat cheese orzo
Place a shallow skillet on medium heat, add butter, and let it melt.
Once the melted butter is hot, add chopped onions and saute until soft, translucent, and fragrant.
Next, add chopped garlic and cook it for 30 seconds, stirring it continuously so it doesn't burn.
Add the orzo to the aromatic and stir to combine. Continue to toast the orzo for another 3 to 5 minutes, stirring intermittently.
Pour chicken stock to cover the toasted orzo, stir to combine, reduce the heat, and cook for 8 to 10 minutes or until the orzo is tender, stirring it from time to time to stop the orzo from sticking to the skillet.
Once the orzo is cooked and tender to your liking, add the goat cheese, break it up, and stir it into the orzo until creamy.
Lastly, add chopped sundried tomatoes, then season with salt and pepper to taste.
Take it off the heat and serve hot, garnished with freshly chopped parsley and lemon juice for added freshness and color. Enjoy

This is one creamy pasta recipe that I will make an exception for, and I can confidently say that the leftovers taste amazing; that said, you will need to reheat it to enjoy it. If you do have any leftovers, transfer it to an airtight container and store in the fridge for up to 3 days.
Reheat in the microwave for a few seconds/minutes until hot and creamy. You may need to add a splash of chicken broth or water to loosen up the pasta, as it tends to thicken when stored in the fridge.
