Goat Cheese Orzo

This goat cheese orzo with sun dried tomatoes is a perfect lazy day comfort food you can make in under 30 minutes. You can even make it on a date night. It is cozy, and every mouthful is pure heaven. Rich, flavorful, and creamy. This recipe is all you will want in comfort food. There, I said it: goat cheese makes every pasta dish better.

Ingredients
 
 

  • 400 g Orzo
  • 150 g soft goat cheese
  • ½ cup sundried tomatoes packed in oil drained and chopped
  • 2 Tablespoons unsalted butter
  • ½ cup onion finely chopped
  • 2 garlic garlic finely chopped
  • 1 litre low sodium chicken stock about 4½ cups (see note below)
  • Fresh parsley to serve
  • Salt and pepper to taste

Instructions
 

  • Place a shallow skillet on medium heat, add butter, and let it melt.
  • Once the melted butter is hot, add chopped onions and saute until soft, translucent, and fragrant.

  • Next, add chopped garlic and cook it for 30 seconds, stirring it continuously so it doesn't burn.

  • Add the orzo to the aromatic and stir to combine. Continue to toast the orzo for another 3 to 5 minutes, stirring intermittently.

  • Pour chicken stock to cover the toasted orzo, stir to combine, reduce the heat, and cook for 8 to 10 minutes or until the orzo is tender, stirring it from time to time to stop the orzo from sticking to the skillet.

  • Once the orzo is cooked and tender to your liking, add the goat cheese, break it up, and stir it into the orzo until creamy.
    150 g soft goat cheese
  • Lastly, add chopped sundried tomatoes, then season with salt and pepper to taste.

  • Take it off the heat and serve hot, garnished with freshly chopped parsley for added freshness and color. Enjoy

Notes

Tips and Variations
  • To make this recipe vegetarian, substitute chicken stock with vegetable broth.
  • Add some protein to this dish by adding cooked chicken or shrimp.
  • Depending on the type of orzo you use, you may need to add more broth/stock so the pasta doesn't dry up. I usually start with a ratio of 1:2 (orzo: water), and then I top up with water or stock as needed.
