Easy pico de gallo recipe made with fresh tomatoes, jalapeno, onion, parsley (cilantro) and lime juice. It is quick, simple and ready within minutes

This sauce is also called fresh tomato salsa as it uses raw ingredients and it is a favourite topping or side to some Mexican dishes. It is fresh, mildly flavoured even with the addition of chopped onions, healthy and delicious. I love to serve mine with tortilla chips, egg sauce and tacos.

What Is Pico De Gallo

Pico de gallo is a Spanish word translated to “beak of rooster” or “rooster’s beak”. A tomato-based chopped sauce that is commonly served with some Mexican foods.

It is very similar to Mexican salsa and you can use one in place of the other, only that salsa has more liquid than pico de gallo. Also, Salsa is sometimes cooked while pico de gallo is eaten raw. It is also called salsa cruda or salsa fresca.

Ingredients

Tomatoes: Roma tomatoes, I love to remove the seed from the tomatoes but this is not a must especially if the tomato is still firm. I find not storing in the tomatoes in the fridge helps as well.

Onions: I used red onions for this recipe, but the authentic recipe calls for white.

Jalapeno

Lime juice

Salt

Black pepper: Now this is highly debatable as it is not commonly used for this recipe but a pinch wouldn’t hurt. I just love the aroma of freshly ground black pepper.

Cilantro this is what we call parsley here in the UK.

How To Make Easy Homemade Pico De Gallo Recipe

Chop the tomatoes, onion, jalapeno into small dice. Finely chop cilantro (parsley) to what you are comfortable with

In a medium bowl, combine diced tomatoes, onions, jalapeno, parsley, lime juice, salt and pepper.

Mix to combine, check for salt and lime and adjust to taste.  Leave to rest for about 10 to 20 minutes in the fridge or countertop covered before serving. You can use it immediately if you would be serving it with taco or seasoned chips

Perfect Tips For Pico De Gallo Salsa

  • For the best Pico de gallo, make it on the day you need it to avoid the ingredients leeching excess water. Remember it is not salsa. That being said, it can last longer than a day but you might just need to drain off excess liquid when you need to serve it.
  • Use fresh, ripe and firm tomatoes for this salsa recipe all the time.
  • Leave the pico de gallo to rest for some few minutes before serving in other for it to build flavour.
  • Adjust the recipe to suit your preference. I am not a fan of fresh parsley (cilantro) hence why I used a little quantity.

What is the difference between pico de gallo and salsa: there are not many differences between the two. They both use similar ingredients but cooked differently. One uses cooked ingredients while the other uses fresh raw ingredients

Can I make pico de gallo without jalapeno and cilantro (parsley): the answer is yes and no as the authentic recipe calls for these ingredients. Personally, I wouldn’t omit these ingredients rather I would use them in little quantity.

Is this recipe healthy: Absolutely, all the ingredients used contains a good nutritional value and it can be eaten in place of a salad.

What else can I add to this recipe to bulk it up: salsa Fresca and avocado are a marriage made in heaven, chopped or mashed avocado would be my first choice. You may choose from chopped mango, fresh corn or any other add-ins you fancy

Can it be frozen: No, this recipe is best made on the day of use. Store in the fridge for up to 24 hours.

Ingredients
  

  • 1 lb chopped diced tomatoes about 6 to 8 ripe and firm tomatoes
  • ½ cup onions chopped
  • 1 Jalapeno chopped
  • Juice of ½ lime juice
  • Salt to taste
