Canned salmon pasta with tomato! This incredibly economical yet mouth-wateringly tasty pasta dish could be your dinner in 15 minutes, perfect on any hectic weeknight. It's convenient, straightforward, and loaded with robust flavors, with the best part being that it principally uses ingredients you're likely to have already stocked in your pantry.

Ingredients
  

  • 300 g pasta
  • 400 g chopped tomatoes
  • 15 0z canned salmon 2 x 213g
  • 2 Tablespoon olive oil
  • ½ cup parmesan cheese grated
  • 1 Tablespoon garlic finely chopped
  • ½ cup onion finely chopped
  • ½ tablespoon Italian seasoning
  • Salt and freshly ground black pepper
  • fresh parsley finely chopped
  • Pasta water about 1 cup

Instructions
 

  • Bring a large pot of salted water to a rolling boil, add spaghetti and cook until al dente. Reserve about 1 cup of pasta water to use for later. In the meantime, make the tomato sauce.
  • Place a shallow skillet on medium high heat, add olive oil, and heat until hot. Add chopped onions and saute until soft, translucent and fragrant. Add chopped garlic and cook for 30 seconds, stirring it occasionally so it doesn't burn.
  • Carefully pour the chopped tomatoes into the sauteed aromatic, add Italian seasoning, salt and black pepper and stir to combine. Reduce the heat and simmer for 5 minutes. Stir it occasionally so it doesn't dry up or stick to the bottom of the pan.
  • Add half a cup of pasta water and grated parmesan cheese to the tomato sauce and stir to combine. Cook until the cheese is fully melted.
  • Drain and add the canned salmon to the sauce (debone the salmon if you prefer). Break the salmon into smaller chunks with a ladle and stir to combine until all the ingredients are well combined. Simmer for 2 minutes. Check for salt and pepper and adjust accordingly.
  • Add the drained pasta and gently stir or toss to combine. If you prefer a thinner sauce, add more reserved pasta water until you reach your desired consistency.
    Just before you take it off the heat, stir in some finely chopped parsley.
  • Serve immediately, topped with freshly grated parmesan cheese and a side of garlic bread. Enjoy!
