Ingredients

  • 4 boneless skinless chicken breast
  • Salt and black pepper to taste
  • 1 Tablespoon garlic chopped
  • cup Italian dressing marinade

Italian dressing marinade ingredients

  • ½ cup olive oil
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon Dijon mustard sub with whole grain mustard
  • cup parmesan cheese grated off a block
  • ½ Tablespoon onion powder
  • 1 Tablespoon sugar
  • 1 Tablespoon Italian seasoning
  • Salt & black pepper to taste
  • 1 Tablespoon lemon juice

Instructions

Make the marinade

  • To a small bowl or an airtight jar, add olive oil, red vine vinegar, dijon mustard, parmesan cheese, onion powder, lemon juice, sugar, Italian seasoning, red pepper flakes, salt and pepper and mix to combine.
Measure out ⅓ cup and keep the remaining in the fridge to use on a salad or other ways you desire.
½ cup olive oil, 2 Tablespoons red wine vinegar, 1 Tablespoon Dijon mustard sub with whole grain mustard, ⅓ cup parmesan cheese grated off a block, ½ Tablespoon onion powder, 1 Tablespoon sugar, 1 Tablespoon Italian seasoning, Salt & black pepper to taste, 1 Tablespoon lemon juice

Marinate the chicken

  • Prep the chicken by removing any unwanted fat from it then transfer it to a Ziploc bag or a bowl. Season with salt and black pepper, add chopped garlic then pour the Italian dressing over the chicken. Seal the Ziploc bag and proceed to massage the chicken with your hands until it is evenly coated in the marinade. Alternatively, you can pour the marinade all over the chicken in the bowl and using a wooden spoon or spatula stir until everything is evenly coated.
4 boneless skinless chicken breast, Salt and black pepper to taste, ⅓ cup Italian dressing marinade, 1 Tablespoon garlic chopped
  • Marinate for at least 30 minutes up to 12 hours in the fridge. If you would be marinating for just 30 minutes then it is ok to place it on the countertop provided the chicken has not been out of the fridge for up to 2 hours.

Cook the chicken

  • Now preheat the oven to 400F/200C then prepare the oven-safe baking dish or line a rimmed baking tray with parchment paper and set aside.
  • Once you are ready to cook the chicken, transfer it to the prepared baking dish or tray and bake in the preheated oven for 20 to 25 minutes or until the internal temperature registers 165F/74C.
  • Remove the cooked chicken breast from the baking dish or tray and transfer unto a plate to rest for at least 5 minutes before slicing it. That way, the juices will redistribute within the chicken for a juicy and tender result. Serve with your favorite sides and enjoy.

Notes
