  • 500 g fresh Cranberries
  • 1 cup caster sugar
  • Orange zest from 1 orange about 1 tablespoon
  • ¾ cup fresh orange juice
  • 1 teaspoon cinnamon or 1 cinnamon stick
  • Pinch of salt
  • ½ tablespoon vanilla extract

Instructions

  • Turn on your instant pot, then add the cranberries, orange juice, sugar, vanilla extract, cinnamon and gently stir to combine. Lock the instant pot pressure cooker to safety and move the valve to "sealing" position.
  • Press the high-pressure button on your instant pot or meat function if using pressure king pro and time for 2 minutes. The pressure cooker does take some few minutes to build pressure, at the end of the 2 minutes, the pressure cooker would beep and begin to pressure release naturally (L0 00) leave it to natural pressure release for 10 minutes (L0 10) then carefully do a quick release.
  • Select the saute button and stir the sauce until it thickens and reduce in size. Take the inner pot out of the instant pot and leave to cool completely at room temperature before storing the sauce in a clean airtight jar.

Notes

How to make cranberry sauce on the stove top

Following the same method as the pressure cooker. Add all the ingredients to a pan and simmer over medium heat for 15 minutes or until the berries start to pop stirring frequently in between. Please note that the sauce will thicken as it cools down so don’t fret if the sauce looks a bit runny after cooking.
