Pasta with Bacon and Peas

Ingredients
  

  • 300 g raw pasta
  • 2 cups frozen peas adjust to preference
  • 200 g streaky bacon diced
  • ½ cup onion diced
  • 3 Garlic cloves minced
  • 1 teaspoon Herbs de Provence
  • 100 g cream cheese
  • ½ cup parmesan cheese freshly grated
  • 1 teaspoon lemon pepper seasoning
  • ½ teaspoon ground black pepper
  • Chili flakes to taste
  • Parsley
  • Pasta water about ¾ - 1 Cup

Instructions
 

  • Start by boiling the pasta in salted water according to the package instructions. Drain and reserve some pasta water!
  • While the pasta is boiling, place a skillet over medium-high heat, once the pan is hot add diced bacon (or lardons) and spread it out in the pan. Cook the bacon until golden brown and crisp, and then remove it from the pan with a slotted spoon, and set it aside on a paper towel-lined plate to drain.
  • To the same pan, (reduce the bacon grease if need be) add diced onion and garlic, and sauté until softened.
  • Next, add reserved pasta water to the sauteed aromatics and deglaze the pan at the same time whilst stirring the content.
  • Add cream cheese, parmesan cheese, chili flakes, Herbs de Provence, lemon pepper seasoning, and black pepper to the pan and stir to combine. Add frozen peas and cooked bacon (reserve come to serve) and continue to cook for another minute.
  • At this point, the pasta should be cooked by now, drain the pasta and add it to the creamy sauce and toss until combined. Check for salt and adjust accordingly and take it off the heat.
    Serve the pasta with more grated parmesan cheese and the reserved bacon with a squeeze of fresh lemon juice. Enjoy!
