Ingredients
  

  • 1 lb fresh tomatoes
  • 150 g Burrata use more if you cheeseee.
  • ¼ cup brown onion finely chopped
  • 2 Tablespoons Extra virgin olive oil
  • 2 Tablespoons basil oil
  • 1 Tablespoon aged balsamic vinegar or as needed
  • 1 teaspoon Italian seasoning
  • Salt and Freshly ground black pepper
  • Crusty bread to serve I used a baguette
  • Fresh basil leaves to serve

Basil oil ingredients

  • 15 g basil leaves
  • ½ cup extra virgin olive oil
  • 2 Garlic cloves
  • ½ teaspoon red pepper flakes
  • Salt to taste

Instructions
 

  • Make the basil oil: to a food processor or a small blender, add extra virgin olive oil, fresh basil leaves, red pepper flakes, garlic cloves, salt, and black pepper, and process until all ingredients are blended and well combined.
  • Taste and adjust the seasoning as needed. Pour the basil oil into a bottle and set aside. There is no need to place it in the fridge; it needs to be at room temperature.
  • Marinate the chicken: Finely chop the onions and slice the tomatoes into halves or quarters (or rounds) if you use large tomatoes.
  • Transfer the tomatoes and onions into a bowl, add Italian seasoning, extra virgin olive oil, salt, and black pepper, and stir to combine. Leave to marinade for at least 15 minutes before you assemble the salad. You can marinate it for longer if you prefer.
  • Assemble the salad: Place the burrata cheese in the center of a rimmed plate, and add the marinated tomatoes around it. Drizzle with balsamic vinegar and basil oil, garnish with fresh baby basil leaves, and serve with crostini. Enjoy!

Notes

Depending on their appetite, this recipe will feed 4-6 people as an appetizer.
I also did not account for the calories of the basil oil, as this can be used according to preference.
