Leftover Turkey Fried rice

Ingredients
  

  • ½ lb leftover cooked turkey
  • 3 Tablespoons Olive oil
  • 2 cups cooked rice
  • 2 larges eggs
  • 1 cup frozen mixed vegetables
  • 3 spring green onions
  • 2 large garlic
  • 1 ½ Tablespoon soy sauce I used a combination of light and dark soy sauce.
  • 1 Tablespoon oyster sauce
  • 1 Tablespoon Chinese rice wine
  • ¼ teaspoon Chinese 5 spice optional
  • Salt and white pepper to taste

Instructions
 

  • Chop the green onions thinly, separating the white and the green parts, then roughly chop the garlic.
  • Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, and rice vinegar then set aside.
  • Break the eggs in a bowl, add a pinch of salt and whisk to combine.
  • Place a wok or shallow skillet on medium-high heat, and add (half of the) oil, and heat until it shimmers but is not burning. Add the whisked eggs, leave it to set for 10 seconds, then stir it to scramble it without breaking it up too much. Remove from the pan and set aside.
  • Add the remaining oil to the skillet, add the white part of the green onions and chopped garlic, and cook for 30 seconds to 1 minute until fragrant.
  • Add the frozen mixed vegetables, stirring occasionally for 2-3 minutes or until soft and fully defrosted.
  • Next, add the chopped leftover turkey, followed by the Chinese 5 spice, white pepper, and a pinch of salt, and stir fry for 30 seconds.
  • Add the cooked rice and break it up with a spatula. Next, add the stir fry sauce scrambled eggs and stir to combine.
  • Just before you take the fried rice off the heat, add the green part of the green onion and give the rice a good stir. Take it off the heat and serve immediately. Enjoy

How to store
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a pan or microwave until hot before serving.
