Ingredients
  

  • 2 cups dried orzo
  • 150 g Boursin cheese
  • 30 g unsalted butter
  • 3 cups baby spinach or as needed
  • 3 cups chicken stock
  • Salt and black pepper to taste

Instructions
 

  • In a large skillet, add butter and melt on medium heat
  • Add dried orzo to the melted butter, stir and toast for about 1-2 minutes
  • Stir in chicken stock over the toasted orzo, season with salt and black pepper if using, and bring to a boil until the orzo is al dente.
  • Add Boursin cheese to the cooked orzo and stir until well incorporated and creamy. You can add water at this point if need be.
  • Finally, add some baby spinach and let it wilt as you stir. Once everything is mixed together, test the seasoning to make sure it's perfect!
    Turn off the heat and serve immediately.
