Preheat oven to 375F/190C spray or rub the bottom of a baking dish or nonstick pan with cooking oil.
Pat the salmon dry with paper towels, then arrange it in the prepared baking dish skin side down.
Brush the fleshy part of the fish with oil and season with salt and pepper to taste.
Next, evenly spread or rub the jerk seasoning paste on the fish and the sides if you could. (Leave the salmon to come to room temperature and as well marinate in the sauce for about 15 minutes before baking)
Place the baking dish in the oven and bake for 15-18 minutes or until the salmon is cooked through and flakes easily with a fork. The internal temperature should be around 145F/60C when fully cooked.PS: you can place the fish under the broiler for another 3-5 minutes for a caramelized finish if you desire.
