Baked BBQ Chicken Thighs

A perfect weeknight chicken dinner your family would love. Let me show you how to make it with my step-step guide.

Ingredients
  

  • 8 bone-in, skin-on chicken thighs
  • 1 Tablespoon olive oil
  • 1 cup Bbq sauce any of your favorite bbq sauce would work for this recipe, I used sweet baby rays sauce.
  • 1 Tablespoon hot sauce
  • ½ Tablespoon onion granules
  • ½ Tablespoon garlic granules
  • 1 Tablespoon Smoked paprika
  • Salt and freshly ground black pepper to taste 1 used about 1 teaspoon of each

Instructions
 

  • Preheat the oven to 200C/400F (Gas 6)
  • Prep the chicken by removing any unwanted fat and trimming off any excess hanging skin.
  • Transfer the chicken into a large Ziploc bag, add smoked paprika, onion granules, garlic granules, olive oil, salt, and black pepper, close the Ziploc bag and give the chicken a good shake so that the spice rub evenly coats the chicken. Marinate the chicken for at least 30 minutes (optional)
  • Line a baking dish with parchment paper or place a wire rack on a rimmed baking sheet. Arrange the chicken on the rack skin side up, place the tray in the oven and bake the chicken for about 25-30 minutes or until the chicken is about 80% cooked through.
  • Meanwhile, mix together the bbq sauce and hot sauce in a small mixing bowl until fully combined, then set aside.
  • Carefully remove the chicken from the oven and brush the bbq sauce on both sides of the chicken. Return the chicken into the oven and bake for additional 10-15 minutes or until the chicken is cooked through, skin crispy, the sauce caramelized, and the internal temperature reaches 165F/74C. Flip the chicken halfway through this cooking time to get some caramelization at the bottom of the thighs.
  • Once done, remove the chicken from the oven and let it rest for a few minutes before serving it hot with your favorite sides. Enjoy!
    PS: if you want the skin to be a bit charred like it was cooked on the grill, then pop the chicken under a broiler for about 5 minutes or until the desired effect is achieved. Do keep an eye so that it doesn't burn.

Notes

How to store
This chicken can be stored in the fridge for up to 3-5 days in an airtight container or in the freezer for up to 2 months.
To reheat: the best way to reheat bbq chicken is in the oven or the air fryer (160C/320F for 8-10 minutes). If reheating from frozen, simply thaw the chicken overnight in the fridge then heat it in a 350F/180C preheated oven until warmed through. Only use the microwave if time is of the essence.
