Equipment

  • small saucepan

Ingredients

  • cup pumpkin puree use homemade or store-bought canned pumpkin puree, just make sure it is pumpkin pie filling.
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice
  • 1 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1 cup water

Instructions

  • Add all ingredients to a small saucepan, stir well to combine. Bring to a boil over medium heat until the sugar is completely dissolved and the liquid syrupy. This should take about 5 to 10 minutes or longer depending on how thick you want it, however, the syrup does thicken as it cools down.
  • Remove the saucepan from the heat and allow the syrup to cool completely before handling. Transfer the syrup to a dry clean bottle or jar, cover tightly, and store in the fridge for up to 2 weeks.
Note: the recipe will yield about ¾ cup

Tips
  • If you are not a fan of any of the spices used for this sugar syrup them feel free to omit it.
  • The spices used in the syrup will likely settle at the bottom of your drink, if this would be an issue for you, strain the syrup before bottling
  • Do not leave the syrup out on the countertop; pumpkin puree is extremely perishable and can shorten the syrup's shelf life if not stored or handled correctly. Store it in the fridge at all times.
