Heat up olive oil on medium high heat in a casserole dish and carefully add the sausages. Brown the sausages all over until golden brown. Remove from the pan and transfer to a plate.
Add chopped onions and garlic to the remaining oil in the pan and sauté until soft, fragrant and almost caramelised.
Return the sausages to the pan, pour the baked beans all over it, add Worcestershire sauce, smoked paprika, salt and pepper and stir to combine. You can add about ½ cup of low sodium vegetable stock or water if you would be leaving the casserole to cook for longer than 15 minutes
Reduce the heat and simmer for 15 minutes on low heat. Stir in chopped coriander, parsley or cilantro. Note: high heat would burn the casserole so do keep an eye.
Remove from the heat and serve.
