Ingredients

  • 2 tablespoon instant coffee this can be instant coffee espresso or ground coffee of choice
  • Water hot water if using instant coffee or brewing ground coffee. Filtered water if using cold brew
  • Sweetener of choice any type of sugar works for the recipe. If you would prefer not to have sugar in the coffee cubes then a simple homemade vanilla syrup would be best as it dissolves easily into the iced beverage.

Instructions

  • Make the coffee: add 2 tablespoons of coffee to a mug or a heatproof glass, add 100 ml of hot water to dissolve the granules. Then top with 200ml cold water or enough to make 2 cups of coffee. Leave to cool. Alternatively, brew your coffee as you would normally would if using ground coffee
Sweeten if desired: Add sugar to sweeten at the point you added the hot water and stir until dissolves. This is important before moving on to the nest stage.
  • Pour the cooled brewed coffee into ice cube trays and freeze for 3 to 4 hours or overnight.
  • When ready to use, remove the ice cubes from the ice trays, add to a coffee glass of mug of choice, top with your favourite milk, sugar syrup and stir to combine. Drink and enjoy!

Notes

Tip
Run the ice trays under warm water for a few seconds to make them easy to release from the tray. Alternatively, use a silicone ice tray, the iced cubes pop out easily with no restraints.
How to store
  • Do not refreeze thawed coffee.
  • Frozen ice coffee can be kept in the freezer for up to 1 month if stored in a Ziploc bag.
