Ingredients
  

  • 2 cups basmati rice I used golden sella white basmati rice
  • Zest from 1 lime
  • ¼ cup lime juice
  • 2 garlic cloves chopped
  • 1 Tablespoon olive oil
  • Salt
  • 2 Tablespoons unsalted butter
  • cup fresh Cilantro leaves chopped
  • 3 cups water or broth

Instant pot cilantro lime rice recipe

  • Rinse the rice: this step is important as it helps remove excess starch from the rice. Rinse the ice under cold water until the water runs clear, drain and set aside.
  • Turn Instant Pot to saute mode, add the olive oil, and heat the olive oil until hot and shimmering. Add in the washed rice, stirring to coat with the oil. Add lime zest and chopped garlic then continue to saute stirring occasionally until the rice releases a nutty flavor and some of it is lightly browned.
  • Add in water or broth and salt and stir to combine. Close the lid of instant pot, make sure to seal the valve. Press the high pressure (or manual ) button and set the timer to 6 minutes. Once the cooking cycle is completed, let the pressure cooker release naturally for 5 minutes then carefully do a quick release to release the remaining pressure.
  • Once the oin drops (or no more pressure) carefully open the lid of the instant pot. Add lime juice, chopped cilantro and butter (if using) and stir together with a spatula to combine and the butter totally melted into the rice.
  • Serve while it is still hot and enjoy.

Stovetop Cilantro Lime Rice cooking instructions

  • Rinse the rice under cold water until the water runs clear, this is to remove any excess starch. After rinsing, drain the rice and set it aside.
  • Heat olive oil in a large pot over medium heat. Once the oil is hot and shimmering, add the rinsed rice and stir to coat it with the oil. Add the chopped garlic and lime zest, stirring occasionally. Cook until the rice is lightly browned and releases a nutty aroma.
  • Add water or broth along with salt, stir to combine then turn up the heat to bring it to a rolling boil. Once boiling, reduce heat to low, cover pot with lid, and allow to simmer until the rice is done. This should take about 15-20 minutes depending on how much water you added.
  • Fluff the cooked cilantro lime rice with a fork then add in fresh lime juice, chopped cilantro, and butter (if using). Stir to combine until the butter has completely melted into the rice. Serve and enjoy while still hot
