Ingredients
  

  • 300 g penne pasta
  • 1 cup sundried tomatoes in oil drained and chopped
  • ½ cup shallots finely chopped finely chopped
  • 1 Tablespoon garlic chopped
  • ½ Tablespoon Italian seasoning
  • 2 Tablespoon unsalted butter
  • ½ teaspoon chili flakes
  • 1 cup half and half also known as single cream
  • ½ cup low-sodium chicken stock
  • Fresh basil about 8 leaves
  • Salt and black pepper to taste

Instructions
 

  • Cook the pasta: place a large pot of salted water over medium high heat then bring to a boil. Add pasta and cook according to the package directions or until al dente.

  • Make the creamy sundried tomato sauce: While the pasta is cooking, heat the butter in a large skillet over medium heat. Add the chopped shallots and cook until soft, translucent and until fragrant. Add chopped garlic and sundried tomatoes and cook for 1 minute stirring regularly so it doesn't burn.

  • Add Italian seasoning, chili flakes, salt and black pepper and cook for 30 seconds stirring occasionally.

  • Pour single cream and parmesan cheese, stir to combine, bring to a simmer and cook for 5 minutes or until the sauce has thickened slightly.

  • Shred some fresh basil into the sauce and stir to combine.

  • Add cooked pasta: drain the pasta (reserve some pasta water) and add it to the creamy sauce. Toss or stir to combine. If the sauce is becoming thick, add some of the reserved pasta water to loosen it up.
  • Take it off the heat and serve immediately. Enjoy!
