Ingredients
  

  • 1 English cucumbers thinly sliced
  • 2 Tablespoons cilantro finely chopped
  • Juice of one lime about 1½ Tablespoons
  • cup onion thinly sliced
  • 2 Tablespoons extra virgin olive oil sub with olive oil
  • 1 teaspoon olive oil
  • Chili flakes
  • Salt and black pepper to taste

Instructions
 

  • In a large bowl, add sliced cucumbers, thinly sliced onions, finely chopped cilantro, lime juice, extra virgin olive oil, honey, chili flakes, salt and pepper.
  • Using two spoons, gently toss everything together until evenly mixed, then chill in the refrigerator for at least 15 minutes for the flavors to meld before serving. Enjoy!
