Butter Potatoes Recipe

Ingredients
  

  • 2 lb large white potatoes
  • 50 g butter salted or unsalted
  • 3 garlic cloves chopped about 1 Tbsp
  • 1 Tablespoon parsley chopped optional
  • Salt and black pepper to taste

Instructions
 

  • Scrub and wash the potato clean, (peel if desired) and cut it into equal chunk sizes.
  • Fill a large pot with cold water and place on medium-high heat, add salt to taste and stir to combine.
  • Transfer the chopped potatoes into the cold water making sure it is fully submerged, bring the water to a rapid boil for about 5 minutes then reduce the heat to simmer for another 5 to 8 minutes until the potatoes are done and fork-tender.
  • Drain the potatoes in a colander and set aside to cool slightly.
  • Place the pan you used to boil the potatoes back on the stove, add butter and reduce the heat. Cook the butter until it is slightly brown and nutty, then add chopped garlic and saute for about 30 seconds or until fragrant. Keep an eye on it so it doesn't burn.
  • Return the boiled potatoes to the garlic-infused butter and carefully stir until the potatoes are well coated with the garlic butter sauce.
  • Sprinkle some chopped parsley over the potatoes and stir to combine. Remove the pan from the stove.
  • Transfer the butter potatoes to a serving dish, and leave for about 5-10 minutes for the flavor to infuse before serving. This dish is best served warm. Enjoy

Notes

How to store
This dish is best served fresh, however, if you do have leftovers, store it in an airtight container and store it in the fridge for up to 3-4 days.
Reheat in the oven or microwave until hot to your liking.
