- 2 pounds potatoes
- 250 g ricotta cheese at room temperature
- 4 garlic cloves peeled
- 4 cups low sodium chicken stock top up with water
- ½ cup whole milk
- 100 g unsalted butter
- Salt and black pepper to serve

Instructions
- Boil the potatoes: peel and cut the potatoes into similar big chunk sizes and wash them under clean running water. This is important so that the potatoes cook evenly.2 pounds potatoes
