    Cereal pancakes! These mini pancakes are similar to poffertjes because of their sizes. They are fluffy and delicious, more importantly, fun to make, thanks to the best pancake mix used, you can easily whip up in 2 minutes.

    This recipe is not only great for breakfast alone, you can have them any time of the day, lunch, brunch and even dinner.

    We have barely recovered from the viral food trend of the coffee drink Dalgona. Here we are again with another Tik Tok viral recipe, cereal pancake. I guess Tik tok does know how to make things go viral.

    What is cereal pancakes

    In case, you are wondering what pancakes cereal are, well they have been in existence way before Tik Tok. It is basically your regular fluffy pancake served and made in miniature size. Instead of your normal serving of 3 to 4 pieces of pancakes per person, you would have like hundreds instead served in a bowl like you would with your favourite cereal.

    Mini Cereal pancakes are mostly served to kids to make mealtime more fun and to help babies and toddlers during weaning (BLW) process as they can easily pick it up to eat.

    Pros: it is super fun to make and, in my opinion, you eat less than you would when eating regular pancakes.

    Crispy pancakes which if you are down for an adventure would work a treat when you add milk to it, just like the real thing.

    It is not tricky to eat at all, you either eat it using a fork or spoon. I prefer it with a fork

    Cons: it is not as quick as the normal pancakes, but every effort put into making this recipe is worth it. Don’t be discouraged by the size and how long it would take to make them. You can even make them as a treat, rather than a meal.

    It get soggy quicker if you add milk than the regular cereal. You might enjoy it if you eat cereal with hot milk.

    It is not what you make when your time is of the essence, that is why I prefer it for brunch or dinner.

    Tik Tok Cereal Pancakes

    I saw it recently on Instagram since I am not yet on Tik Tok and was planning to make some. My daughter coincidentally, saw it too and asked that I make some for her and her sister. I was incredibly happy to oblige, and I had no regret making it.

    They loved it especially the little one as she can be fussy with food she can’t taste straight away. I don’t know how to explain it, but I know she likes textured food and what she can taste without chewing first.

    I was pleasantly surprised she took to this nicely, may be the honey, banana and choc chips did the trick, but it was well received.

    Best pancake mix recipe

    A great pancake whether mini or normal size is down to the pancake batter. Nobody wants to be biting into a stodgy pancake, it has to be fluffy or nothing.

    For this pancake cereal recipe, I used my basic pancake mix as it is fool proof, plain flour (all purpose flour), milk, eggs, sugar and pinch of salt.

    This recipe works perfectly every time and you can easily adjust the milk to flour ratio to achieve the consistency of the batter you want. I also let the batter sits for some few minutes which results into fluffy pancakes at all times.

    Ingredients for this recipe

    All purpose flour (plain flour)

    Skimmed milk: swap for non-dairy milk or real buttermilk or homemade one made with milk and lemon.

    Egg

    Pinch of salt

    Sugar

    Baking powder

    Vanilla extract

    Flavourless cooking oil or butter: this is optional as you can do without this ingredient.

    Tools needed to make these delicious tiny pancakes

    Mixing bowl or

    Blender

    Sauce bottle

    Ziploc bag or piping bag

    How to make pancake cereal (Tik Tok mini cereal pancakes)

    You can either use a bowl or a blender to make this easy recipe. I found blender easier to use.

    To a blender, add milk, vanilla extract, egg, salt, sugar, flour and blitz until combined.

    Pour the pancake batter to a sauce bottle or Ziploc bag, push it to one corner of the bag to make an acute angle, then snip at the end (just enough to squeeze out the pancake batter easily)

    Place a non-stick frying pan on medium heat, you can either grease with butter, oil or without and heat until hot.

    Squeeze out the batter unto the hot pan (about 1 pound size) until fully covered, making sure they are not touching one another.

    Cook the tiny pancakes until they start to bubble and you can lift the edges or after about 30 seconds and flip using a fork, spatula or chopsticks. The mini pancakes should be golden brown before you flip, continue to cook the flipped side for another 20 to 30 seconds. Transfer to a bowl, you do not need to cover it

    Serve with butter, honey or maple syrup.

    Variations

    After you have squeezed the batter unto the pan, you can add the following

    Sprinkle some funfetti, choc chip or chopped nuts.

    Serve these pancakes with honey, maple syrup, chocolate sauce or milk

    Tips for making the best mini pancakes

    Make this recipe vegan by using non-dairy milk like almond milk, oat milk or soya milk

    Rest the pancake batter for about 5 minutes before frying, to release the gluten in the flour, it results to a fluffy pancake.

    Serve with fruits like banana, blueberries, strawberries or other fruit of choice.

    If you make mix the batter in a batter, it is fine if there are lumps here and there, these would reduce or disappear when you rest the batter.

    • non-stick frying pan

    • 180 g all-purpose flour (1½ cups US) plain flour
    • ½ teaspoon baking powder
    • 200 ml skimmed milk: swap for non-dairy milk. keep it healthy if you would be adding sweet toppings (1 cup US)
    • 1 large Egg 55g
    • Pinch of salt
    • 1 tablespoon sugar or use as prefered
    • 1 teaspoon vanilla extract
    • Flavourless cooking oil or butter to fry optional

    Instructions
