½ lb dried pasta: I used conchiglie pasta, which is perfect for cupping the ground chicken and the sauce. That said, you can use any other type of pasta you prefer. Penne or rigatoni pasta would work well here too.
1 lb ground chicken (Ground beef is also known as chicken mince in the UK)
2 tablespoons olive oil
1 cup onionfinely chopped
4 garlic cloves finely chopped
1 tablespoon tomato paste
1 teaspoon chili pepper flakes or as needed
½ tablespoon Italian seasoning
400g canned chopped tomatoes
1 Tablespoon Worcestershire sauce
1 chicken stock crumbled
600ml water
½ cup parmesan cheese
10g fresh basil
Salt and pepper to taste
How to make ground chicken pasta
Saute garlic and onions: Heat the olive oil over medium heat in a large shallow pot or Dutch oven. Add the chopped onion and garlic and saute until fragrant, soft, and translucent.
Cook the chicken: Add the ground chicken to the pot. Cook until the chicken is no longer pink, breaking it apart with a wooden spoon.
Season the mix: Season the chicken with salt, black pepper, chili pepper flakes, and Italian seasoning. Add the tomato paste and stir to combine. Cook for about 1 minute.
Add tomatoes and liquids: Stir in the chopped tomatoes and Worcestershire sauce. Crumble in 1 chicken stock cube, then add 600ml of water. Stir until well combined.
Cook the pasta: Add the dried pasta to the pot and stir well. Cook until the pasta is al dente, about 8-10 minutes, occasionally stirring to prevent it from sticking to the bottom of the pan.
Finish and serve: Once the pasta is cooked, stir in parmesan cheese and tear in some fresh basil leaves. Stir to combine, remove from heat, and serve immediately. Serve with garlic bread and enjoy!

Then added sliced mushrooms plus a can of lentils(rinsed and drained) with the stock( ha ha, at this point I would have also added zucchini and red capsicum if I had any). After pan was off the heat, stirred through an entire bag of baby spinach. Eating yummy and nutritious meals does not have to be complicated, and I thank you for mentioning to include extra vegetables if desired. Parmesan is compulsory, we measure that with our heart 😉

Made this as my daughter in law doesn’t eat red meat. Was worried using ground chicken it would be bland. It was delicious definitely will be making this again. The only thing I changed was that I used chicken broth instead of water and the bouillon cube.
