I am here again with another variation of the Marry Me recipe. I have already shared the recipe for Marry Me chicken pasta and gnocchi, and now it's time to introduce you to Marry Me butter beans.

What you will need
2 x 400g canned butter beans
½ cup parmesan cheese grated
½ cup sundried tomatoes in oil chopped
1 Tablespoon tomato paste
½ cup brown onion finely chopped
½ cup half and half (single cream)
2 garlic cloves finely chopped
2 Tablespoons unsalted butter
½ teaspoon red pepper flakes or use accordingly
Salt and pepper to taste
Fresh basil
2-3 cups baby spinach
How to make Marry Me butter beans
Add unsalted butter to a skillet on medium-high heat and allow it to melt. Once melted, add the chopped onion and garlic cloves and cook until they become soft, translucent, and fragrant. Add the tomato paste, sundried tomatoes, red pepper flakes, salt, and black pepper.
Stir to combine and cook for 2 minutes, stirring occasionally so it doesn't burn.
Next, add canned butter beans (do not drain) and stir well to combine. Reduce the heat to medium and simmer the beans for 4-5 minutes.
Using a potato masher, mash some of the butter beans slightly, then stir to combine.
Pour the half-and-half (single cream) over the beans, followed by the grated parmesan cheese, and stir well. Bring to a simmer again for 2 minutes.
Add baby spinach and basil to the beans and gently combine until the spinach is wilted. Taste and adjust the seasoning accordingly. Take the Marry Me butter beans off the heat and serve immediately with some crusty bread.
PS: The beans will thicken as it sits, so just add vegetable stock or water as needed to reheat it if you are not serving it immediately. You can also reheat it in the microwave as well. Enjoy!
