How to make the best lamb steak marinade

Add olive oil, whole grain mustard, Worcestershire sauce, lemon juice, garlic herb seasoning salt and pepper to a bowl and whisk until combined.
Place the lamb steaks in a Ziploc bag or a glass bowl or an airtight container (BPA free)
Pour the marinade over the lamb, seal the Ziploc bag and massage it until the steaks are fully coated.
Marinate the lamb for at least 30 minutes or up to 2 hours in the fridge before cooking.
If you would be marinating the lamb for longer say for up to 6 hours or even 24 hours then you should skip the lemon juice and add it to the meat just before you cook it.
Too much acidic ingredients in a marinade can break down the protein of the meat and leave it too soft or mushy. Because of the thickness of most steaks, it is important that you do not over-marinate them.
Sometimes less is more, if the lamb steak is not more than 1 inch thick then 1 hour should be a good enough time to marinate it.

As a rule of thumb a minimum of 1 hour or 3 hours, if you are marinating for up to 24 hours, skip the lemon juice and add it a few hours or just before cooking.
Can I reuse the remaining lamb marinade
No, unfortunately, you can't. Any marinade that has come in contact with raw meat should be discarded for safety reasons.
Can I make this ahead of time
Yes, you can make the marinade well ahead of time and store it in the fridge. Bring it out of the fridge about 30 minutes before use so that the olive oil in the marinade can come to room temperature. Give it another good shake before you use it.
