You might even find yourself eating this straight out of the pan before it cools down. This is one of the meals we never have leftovers from in my home and this instant pot taco recipe here.
Rice pudding is such a delight and even better when cooked in a pressure cooker because you don’t have to babysit it as you would with the stove top version.
I know I rave about my instant pot and pressure king pro pressure cooker a lot but honestly, I can’t get over how easy life has become since I started using them. This hot pudding was ready in under 30 minutes with 10 minutes active cooking time.
You can have this classic rice pudding doing its thing in the pressure cooker while you have dinner or even getting ready for work in the morning. Yes, it is totally acceptable to have rice pudding as breakfast and perfect for a cold winter night.

How to make rice pudding in an instant pot pressure cooker
Rinse the rice until the water runs clear
Turn on your instant pot and add milk in the inner pot. Add washed rice, nutmeg, cinnamon, sugar, butter, water and mix to combine.
Lock the lid to safety and turn the valve to the sealing position. Select the manual button or pressure cook on high pressure and select the timer for 10 minutes.
When the IP completes its cycle, leave to natural pressure release for 10 minutes then carefully do a quick pressure release.
Stir in the condensed milk into the rice. The rice would thicken as it cools but it is too thin, select the sauté function and stir continuously until it thickens to the desired constituency. If it is too thick, add water or milk and stir to combine.
Serve the rice pudding warm or cold with a sprinkle of cinnamon and toppings of choice in a dessert bowl or glass.

How to make Rice pudding on the stove top
This is so easy only you will have to cook it longer than you would in a pressure cooker.
Place all the ingredients in except the condensed milk in a pan and simmer over medium heat until rice becomes tender. Reduce the heat, then stir the condensed milk until well combined.
Serve warm with any topping of choice or on its own.

I really enjoyed this Rice Pudding, here in England we have pudding rice which is a short grain similar to Arborio but half the price. I made it exactly as the recipe but didn't add the condensed milk at the end, just one more tablespoon of sugar to a doubled quantity, perfectly sweet for us and an excuse to have a bigger serving.
I love the simplicity of this recipe, the only tricky part is the final steam release, slow and steady wins the race.

Fabulous recipe. I added sweet cherries on top while serving. I used brown rice and had to add 2 minutes to cook time which is no biggie. Will definitely make again

I am actually making this now and I apologize for commenting before actually tasting but my comment is on the way that the recipe is written. It says I should add the butter to the pot with the rice, milk, sugar and spices but butter is not listed in the recipe ingredients so I had to guess on the amount. You may want to edit the recipe with the butter added.
