What you will need

Ground pork: (Pork mince) I used lean pork mince

Bell peppers: I used red, green and yellow bell pepper

Onion

Jalapeno

Jerk seasoning

Garlic

Salt and black pepper

Low-fat coconut milk

Olive oil

How to make ground pork rice bowl

Prep the veggies: Chop the bell peppers, jalapeno, onion, garlic, and spring onions and set aside. I used my chopped (although there was more washing up), and the whole process took about 75 seconds.

Cook rice and peas: I used my instant pot. I also cooked the rice and peas in a mixture of coconut milk, water, and juice from the kidney bean can. I cook the rice for 7 minutes on low pressure.

Make the Jamaican jerk ground pork: Heat olive oil in a skillet on medium-high heat until hot. Add chopped bell peppers, onion, jalapeno, a pinch of salt, and black pepper, and saute until the onions are soft, translucent, and fragrant.

Add ground pork (pork mince) to the skillet. Using the spatula, break the ground pork into crumbles as it cooks.

Just before the pork is fully cooked, add chopped garlic and season with jerk seasoning, mixing well to combine. Cook for 3-5 minutes until the pork is fully cooked and browned.

Pour in the coconut milk, followed by half of the chopped spring onions and stir to combine. Reduce heat to medium-low and let it simmer for 2 minutes. This will allow the flavors to infuse into the meat mixture.

Take it off the heat and serve over rice and peas and garnish with chopped green onions. Enjoy.

How to store

This pork rice bowl is perfect for meal prepping and will keep well in the fridge for a few days. Leftovers can be stored in an airtight container in the fridge for up to 4 days.

  • 1 lb Ground pork This is also known as pork mince (500g)
  • 3 large Bell peppers I used red green and yellow bell pepper
  • 2 Tablespoons Olive oil
  • 1 large onion
  • 1 red jalapeno
  • 1 ½ Tablespoon Jerk seasoning
  • 4 garlic cloves
  • ½ cup low-fat coconut milk
  • salt and black pepper
