The combination of fresh spring vegetables, my go-to all-purpose stir fry sauce and lean protein makes it a nutritious choice for any day of the week. Plus, it's easy to prepare and can be customized to suit your taste preferences or what you have on hand. It is flavorful and packed with veggies and full of protein.
One of the best things about this stir fry recipe is how versatile it is. You can swap out the ground chicken for beef or pork, or even use tofu, Quorn mince, or tempeh for a vegetarian option. - Oyster sauce
- Chicken stock

How to make ground chicken stir fry
Make the stir fry sauce: in a small bowl or measuring jug, add Dark soy sauce, light soy sauce, Oyster sauce, chicken stock, brown sugar, sesame oil, vinegar and cornstarch (corn flour) and whisk together to combine then set aside.
Saute the veggies: Heat a large skillet or wok over medium-high heat and add some vegetable oil. When hot, add chopped onion and saute for 1-2 minutes until fragrant, add chopped asparagus and bell pepper to the pan and saute for 2-3 minutes until vegetables are tender.
Add the ground chicken: Add the ground chicken (chicken mince) and chopped to the sauteed veggies and cook until white and longer pink, breaking it in the process. Once the ground chicken is fully cooked, add the prepared stir fry sauce to the skillet, and red pepper flakes and stir to combine. Check for salt and pepper and adjust accordingly continue to cook until the sauce is thickened and glossy.
Lastly, just before you take the stir fry off the heat, stir in chopped green onions. Serve this ground chicken stir fry over hot boiled rice or noodles and enjoy! Enjoy!
