How to make creamy pork chops
Pan-sear the pork chops: Season the pork chops on both sides with salt, black pepper, and the dry rub. Heat olive oil until hot and shimmering in a skillet on medium-high heat. Carefully add the pork chops and sear for about 3-4 minutes per side (based on 1-inch thick pork chops) until they are nicely browned. Remove them from the skillet to a plate and set them aside.
Make the creamy sauce: Reduce oil in the skillet, add butter and let it melt. Add the sliced onions and saute until soft, translucent, and fragrant. Add the chopped garlic and cook for about 30 seconds.
Deglaze the pan with the white wine. Cook for about 1 minute. Add chicken stock and heavy cream to the skillet, stir to combine and let it simmer for a few minutes (3-5 minutes) until it thickens.
Return pork chops to the skillet: Once the sauce has thickened to your desired consistency, return the pork chops to the skillet. Spoon some of the sauce over the pork chops (flip them once as they cook) and let them cook for an additional 5-7 minutes until fully cooked.
