Baked Brie Bites Recipe
This 3-ingredient brie appetizer is for you if you're looking for a fast and easy appetizer to serve at dinner parties, Christmas parties, Thanksgiving, or new years eve parties.
The brie is baked on a cut-up store-bought puff pastry with some preserves for that little bit of sweetness and additional flavor.
Cranberry is mostly used as a topping for baked brie especially during the festive season. However, for today's recipe, I've chosen to do things differently and used four distinct varieties of preserves (Jam and chutney).
The gooey and creamy brie sits in a cup of flaky, buttery puff pastry, and each bite delivers an explosion of tastes. I am drooling just writing this post, haha.
The brie cheese adds a smooth creaminess to the buttery puff pastry flavor, and the chutneys and jams add a new level of deliciousness.

Ingredients
Brie cheese: this can be round or wedge
Ready rolled store-bought puff pastry, substitute with crescent roll or phyllo pastry
Chutney: I used onion chutney and spicy tomato chutney
Jam: I used strawberry jam and cranberry sauce
Nuts of choice to serve: I used walnuts but pistachios and pecan are great options too. the nuts give a mild nutty flavor to each brie bite and a little bit of crunch.
Salt: this is optional and I did not use it as well.
How to make brie bites
Preheat the oven at 180C/365F and coat small muffin tin with cooking spray.
Unroll the puff pastry on the parchment paper it comes in or on a lightly floured surface. cut the rectangular puff pastry into 12 or 16 little squares.
Press each pastry square into the muffin tin and partially bake in the oven for 10 minutes, halfway through the cooking time, the puff pastry will begin to rise, use the back of the spoon to push it down and continue to bake.
Carefully remove the pan from the oven and to each of the partially cooked pastries, place diced brie, and top it with about half a Tablespoon of the preserves (cranberry sauce, onion chutney, spicy tomato chutney, and strawberry jam). Top with chopped walnuts or pecans if desired.
Return the pan into the oven and bake for an additional 8 to 10 minutes or until the pastry is puffed, golden brown and the brie melted.
Remove the pan from the oven and leave to cool for 5 minutes. Transfer to a platter, serve and enjoy with family and friends.
Tips
If you're having trouble working with the puff pastry and brie, pop them in the freezer for 10 minutes. It will firm up and be easier to cut.
Remember to thaw frozen puff pastry in the fridge overnight (or according to the packet instruction) to avoid disappointment on the day you intend to make these little gems.
Make variations of this recipe as you desire. Add bacon bits, fig jam, honey, maple syrup, chopped nuts, or a different flavor of preserves specified in today's recipe
Serve them with more pecans, walnuts, jam, chutney, or grapes
Garnish the bites and platter with chopped fresh parsley or cilantro. For more festive vibes, garnish with fresh rosemary

Do I need to cut off the rind of the brie cheese?
No, the rind is edible. But if you prefer, you can cut it off and use only the soft creamy cheese inside.
Can I freeze cranberry brie bites?
Yes, you can freeze cranberry brie bites once it is fully cooked and cooled completely. It will keep in the freezer for up to 2 months.
