Eggless banana mug cake! This tasty microwave dessert is simple, healthy and only takes about 2 minutes tops to make. This recipe can be made with just 5 ingredients but I like to add a pinch of salt, mixed spice and walnut to mine. My mug cake is vegetarian and can be made vegan!

On my other website, myactivekitchen.com, I shared this mug apple crumble recipe, it is one of the popular recipes on the blog. Apart from the fact that it is delicious, I believe one of the reason it is well-loved is the convenience you get from making it.
In fact, if you are like me that can eyeball the quantity of ingredients needed for a recipe, then you could make mug recipes without having to measure anything.
That said, if you are just starting out, try and measure correctly as specified by the recipe, that way you will know or have an idea what the food should taste like the nest time you try it without any measurement.

Quick tips before you start
- The wattage of your microwave would determine how long the mug cake would cook for. Also, another factor that might affect the cooking time is the size of your mug. If you are also using a tall mug like mine then it means your cake might cook about 10 to 30 seconds more than the small mugs that are about 150ml in size.
- So remember, not all microwave and mugs are made the same. If after microwaving for 45 seconds and it is still wet, microwave for another 30 seconds until the cake is well done.
- I think this point should have come first, check that your mug is microwavable!
- If you are not ready to eat your banana cake immediately, you can make the batter ahead and store in the fridge for up to 24 hours. Give it one quick stir on the day of use and pop in the microwave to cook.
- To make chocolate banana mug cake, add ½ tablespoon of unsweetened cocoa to this recipe and you are good to go. You can also add few choc chips too.
- Add 1 tablespoon of peanut butter for nutty flavour.

How to make banana mug cake
This is a 5 minutes recipe so let's make it. I would suggest you gather all the ingredients so you don’t miss anything out. Also, I only used 1 tablespoon, a mug and a fork for this recipe. I believe you should be able to pull that off too, so let’s get started.
To a mug, add one small banana or half of a big one and mash until almost smooth. To the same mug, add milk, vegetable oil and mix to combine. Then add brown sugar, mix to combine.
To the wet ingredients, add 4 tablespoons plain flour, salt, baking soda, mixed spice and mix gently until fully combined. Lastly, crumble some walnuts and gently fold into the mix.
Microwave between 1 to 2 minutes or until the cake is no longer wet
How to serve banana mug cake
You are best enjoying this recipe while it is still warm on its own or with, fresh slices of banana, ice cream or cream cheese frosting.
How to store
Unfortunately, this is one serving recipe and should be consumed on the day it is made. you are best eating it while it is still warm.

- 4 pieces walnuts optional
