    This is the best baked sweet potato slices you can make at home under 30 minutes. It is savory yet sweet, tender, and flavorful, and the perfect side dish to any meal!

    These baked sweet potato slices are made with fresh herbs and other pantry staples ingredients. This is so good, you will be making it over and over again. It will make an addition to your thanksgiving, easter, or Christmas dinner table.

    This recipe is so easy even a child could make it (under supervision of course). I love that you can serve these baked sweet potato rounds either savory or sweet. Today, I am keeping things simple and showing you the savory version. The sweetness of the potatoes still comes through, but it is balanced with fresh herbs. You can use any combination of herbs you like, but I used rosemary and thyme. I sometimes add sage too if I have it at hand because why not.

    You could also add a little bit of grated parmesan cheese on top if you want to make this extra savory. I did not do that today, but it is an option. What are you waiting for, let me show you how to bake sweet potato slices in the oven in simple steps.

    What is in these baked sweet potato slices

    To make this super easy and simple sweet potato side dish, you will need the following Ingredients

    Sweet potatoes: I use medium-sided sweet potatoes

    Olive oil

    Garlic granules: sub with garlic powder or garlic paste

    Fresh thyme

    Fresh rosemary

    Salt and black pepper to taste

    How to make baked sweet potato slices

    Preheat oven to 375F/190C, line a baking sheet with parchment paper, or alternatively use a nonstick tray

    Wash the sweet potato clean under cold running water and pat it dry with a kitchen towel

    Using a sharp knife or vegetable peeler, peel the potato if you wish

    Cut the sweet potato into about ¼-inch thick rounds. If they are too thick, they will take longer to cook. If they are too thin, they might burn.

    In a mixing bowl, add the sweet potato rounds and drizzle with olive oil. Add garlic granules, fresh thyme leaves, fresh rosemary leaves, salt, and black pepper to taste. Toss everything together until the potatoes are evenly coated

    Spread the potatoes on the prepared baking sheet in a single layer. (You might need to use two baking sheets if they do not fit in one).

    Bake for 20–25 minutes in the oven or until fork tender and slightly browned around the edges.

    Once done, remove from oven and serve immediately while hot.

    • Make sure to cut the sweet potatoes in similar sizes so that they cook evenly.
    • Do not overcrowd the baking sheet. If they are too close together, they might even steam instead of roasting.
