Onion: I used brown onion, but a red one would also do fine.
Garlic granules: I prefer this over fresh garlic as it doesn't burn as a fresh one would.

How to make baked onions and potatoes
Preheat the oven to 190C/385F
Wash the potatoes clean and pat dry with a kitchen paper towel. There is no need to peel the potatoes.
Cut the potatoes into small cubes about 1-11/2 inch size and add to the baking dish.
Cut the onions into chunk sizes and add them to the dish with the potatoes.
Season the vegetables with garlic granules, Italian seasoning, salt, and black pepper, and drizzle with olive oil.
Toss or stir everything to combine, ensuring the veggies are evenly coated.
Bake in a preheated oven for 40-45 minutes or until golden brown and crispy on the outside, stirring halfway through the cooking time for even cooking.
Once fully cooked, remove from oven and let cool for a few minutes before serving.
Garnish the potatoes and onions with fresh herbs. I used fresh chives to compliment the onion flavor in the dish. Enjoy
