I recently treated my family to these garlic parmesan chicken skewers, and I couldn't wait to share the simple recipe with you all. The weather has been so good and warm, so it was the perfect excuse to use the air fryer again.
Usually, I cook them in the oven or on the grill, but this recipe works well with an air fryer, especially when you are cooking for yourself or a family of four to six.

What you will need
- 1 pound boneless skinless chicken breast: By all means, substitute boneless, skinless chicken thighs. You may need to adjust the cooking timing accordingly, as thighs take longer to cook than chicken breasts.
- ¼ cup grated parmesan cheese
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons mayonnaise
- 1 Tablespoon chili paste: substitute with sriracha or any other hot sauce you prefer, and please use accordingly. The chili paste I used is the bottled one from Aldi (not sponsored), and it's not hot at all.
- ½ Tablespoon smoked paprika
- 1 teaspoon garlic granules
- 1 teaspoon onion granules
- 4 Tablespoons unsalted butter
- 1 teaspoon dried parsley
- 1 tablespoon fresh parsley finely chopped
- Salt and pepper, to taste
How to make air fryer garlic parmesan chicken skewers
- Cut the chicken breast into similar bite-sized pieces about 1 inch cube and transfer to a bowl.
- To the chicken, add olive oil, mayonnaise, chili paste (if using), smoked paprika, garlic granules, onion granules, dried parsley, parmesan, salt and pepper. Mix well until well combined and each chicken cube is fully coated.
- Tread the chicken onto the skewers until the chicken is exhausted. (you will need about 4-6 chicken on each skewers)-
- Preheat your air fryer to 400F /200C. Lightly spray the air fryer basket with cooking oil and arrange the skewers in a single layer. You may need to cook in batches if need be.
- Air fry the garlic chicken skewers for 8-10 minutes, flipping them halfway through the cooking time, or it is fully cooked, nicely charred and no longer pink in the middle.
- In the meantime, make the garlic parmesan butter. Melt the butter in the microwave for 10 seconds. (It is okay if it is not fully melted; that is what we are going for here.)
- Add freshly chopped parsley, minced garlic, and parmesan cheese to the melted butter and whisk to combine.
- Once the chicken is fully cooked and reaches an internal temperature of 165F /74C, generously brush the butter evenly on the skewers on all sides.
- Serve immediately and enjoy. I like to serve this garlic chicken parmesan skewers in wraps, over rice, or creamy mashed potatoes.

Tips
- I used metal skewers for convenience. However, if you are using wooden skewers, soak them for at least 30 minutes before using them to avoid burning them in the air fryer.
- If you're not a fan of spicy food, you can omit the chili paste or substitute it with your preferred hot sauce.
- To make this dish even more flavorful, try marinating the chicken in the seasoning mixture for at least 30 minutes or up to 24 hours in the fridge before cooking. This will allow the flavors to fully infuse into the chicken.
- Avoid overcooking the chicken, as it can result in dry meat.
